A twelve-seat hearth · Asheville, North Carolina

Cooked by fire. Finished by ember.

Seven courses over a single white-oak fire, lit at six each morning
and read like weather all day. There is no gas line in the building.

What we believe

A gas burner gives you the same flame every night of its life. A fire never repeats itself. It has moods, it holds grudges, it rewards attention — so we give it all of ours. Every dish at Saffron Ember is timed not to a clock but to a bed of coals that will never exist again.

01 · The Fire

One fire, read all day.

6:00the fire is lit, every morning, before the first delivery arrives
2woods only — white oak for heat that holds, applewood for sweetness at the finish
482°celsius at the grate by service; the coal bed below runs three distinct temperatures
0gas lines in the building — if the fire goes out, dinner is cancelled. It has happened once.

Chef Mara Okafor cooked over gas for eleven years before ripping the range out of her first kitchen. “Fire is the only ingredient on the menu that argues back,” she says. “That argument is the restaurant.”

03 · The Counter

Twelve seats, twice a night.

Seatings at 5:30 and 8:45, Wednesday through Sunday. The counter wraps the hearth — every seat watches the fire work.
